Before turning professional, Jonas had a successful amateur career, winning five ABA Championships in the 64 kg Division for Liverpool club Rotunda ABC by 2010. The following year, she claimed gold in the 64 kg division at the 2009 Women's European Union Amateur Boxing Championships in Pazardzhik, Bulgaria, and won another gold medal in the inaugural GB Amateur Boxing Championships in 2010, beating Amanda Coulson by one point.
In May 2012, Jonas reached the semi-finals of the 2012 AIBA Women's World Boxing Championship in Qinhuangdao, China, becoming the first-ever female British boxer to qualify for an Olympic Games. She then took the bronze medal and a place in the 2012 London Olympics back to Liverpool, where she became the first-ever British female boxer to compete at an Olympics. At the 2012 Olympic Games, Jonas defeated Quanitta Underwood of the United States in the round of 16 but later lost heavily to Katie Taylor, a four-time world champion from Ireland, in the quarterfinals.
Jonas made her professional debut on June 23, 2017, at the age of 33 against Monika Antonik, whom she beat via first-round TKO. She won her next five consecutive fights, four of them via stoppage, before suffering her first loss to Viviane Obenauf via 4th round TKO in a title bout on August 4, 2018.

On August 7, 2020, at the age of 36, Jonas had her first world-title fight against Terri Harper, fighting for the WBC super-featherweight title. In this debut world-title fight, Jonas put on a great performance, and the judges could not separate Harper and Jonas, the fight ended in a split-decision draw.
The following year, Jonas had the opportunity to compete for the WBA, WBC, IBF, WBO, and The Ring female lightweight titles but lost out to Katie Taylor on May 1, 2021. Despite her loss, Jonas bounced back with a spectacular win over Chris Namus, winning the WBO junior-middleweight title via TKO in the second round on February 19, 2022.
Later that year, on September 3, 2022, Jonas became a unified super-welterweight world champion after beating Patricia Berghult via a 10-round unanimous decision. In this fight, Jonas claimed the WBO and WBC super-welterweight world-champion belts. Just a few months later, on November 12, 2022, Jonas went on to unify the WBO, WBC, and IBF super-welterweight world-champion belts after a dominant performance against Canadian boxer Marie-Eve Dicaire.
